I don't go into the kitchen without Veganomicon. It's vegan, but it has some fabulous recipes that are delicious and pretty easy to make. It covers everything from pastries to entrees.
Vegcooking.com. You should be able to find anything there if you are just starting out. You probably don't need any cookbooks, unless you are just looking for a variation of a recipe. Vegan with a Vengeance is a really good cookbook.
How to Cook Everything Vegetarian by Mark Bittman is the most fantastic vegetarian cookbook I've ever read. Also, please check out the Chez Panisse vegetable cookbook--although not strictly vegetarian, the meatless recipes are stunning.
