I have a great vegetarian Chili recipe!!!
1 can each of black beans, northern beans, chili beans,kidney beans, diced tomatoes w/ green chilies,
(large can of) whole tomatoes
bag of frozen corn
1 little can of tomato paste
1 regular sized (i think it's 16 or 20 oz?) salsa ( I use medium)
1 or 2 sliced up Zucchini
Throw it al in a big pot and bring to a boil. Once boiling , turn down heat and simmer for about 20 minutes . You can then add cheese and sour cream (or plain yogurt).
Make sure you drain all the beans except for the chili beans. And stir oftn so you don't scorch the bottom.
Another recipe is biscuit pizza,
get some Grands biscuits and pat each one as flat as you can, put them in the oven for a few minutes (the temp setting is on the biscuit can)
when they're a little brown, spoon some pasta sauce on top then add raw green peppers, onions,tomatoes (last), cheese, and veggie chicken nuggets. put em back in the oven until biscuits are done and cheese is melted. We love these in my house!!!Quick vegetarian meal recipes.....?
You can make this with ground beef or without. I make it without all the time and I really like it:
Halloween Hash
One can of whole kernel corn, drained
One can of kidney beans (I prefer dark, but light is ok too) - NOT DRAINED!
Pour the kidney beans (not drained!) into a saucepan. Then pour in the corn (drained). Mix and heat. That's it! :) Enjoy! :)
(P.S. When I make a larger amount, I use 2 cans of corn and 1 can each of the dark and light kidney beans. It gives it a little more color variety. The taste is the same.)
Spinach Casserole
Use two frozen drained thawed packages of spinach. One small onion - chopped, one package of mushrooms - sliced (button mushrooms are fine, you could probably also use criminis/baby bellas) sauteed together with one tbs butter, and one tbs olive oil. Combine sauteed veggies with spinach in a casserole dish and mix with half a bag of Italian cheese blend and some parmesean. Once combined top it of with more parm. cheese, and sprinkle with a little bit of nutmeg (very light), and a little bit of paprika (you can be more generous with this). Bake at 350 for hmmm...I think 30-40 minutes covered. This recipe is very forgiving, lots of room for experimentation. In the event that the timing is off, you could always bake the dish until heated through, and then top it off with the extra cheese and spices and then broil it for a couple of minutes until topping is golden brown. We usually serve this with our favorite bread, any flavor/type will do; we like Italian, Ukraine, or French.
India Lentil Recipe
Clean and pick through lentils (11/2 cups) boil for 45 minutes with 5 cups water, 1/4 tsp turmeric, and 11/2 tsp salt. Stir frequently to make sure they don't stick to the bottom of the pan. Remove them from heat and mash them until they make a thick puree (I use my cooking wand or whatever the heck its called...it certainly does magic though!) Then add black pepper to taste. In a frying pan, over medium heat roast 11/2 tsp cumin seeds in five tbs of a combination of melted heated butter and vegetable oil (or ghee if it is available or you have the inclination to make it, all it is clarified butter). When the seeds are several shades darker added 5-6 mashed or sliced cloves of garlic and 2-3 dried small red peppers (I use crushed, cause that's what I have, but I don't always add them depending on who I am cooking for). Combine this mixture with lentils and add 1/3 cup chopped coriander (parsley, flat or curly, Italian or cilantro whatever you call it, it's all good and completely optional if fresh is not available. Serve with Basmati rice and yogurt.

Bean preparation: dried are cheapest, but need to be soaked overnight and cooked. Canned are next cheapest, usually - rinse them well and then throw them in a bag in the freezer! Beans freeze fine, and then you just have to microwave as much as you want.
Breakfast burrito: tortilla, cheese, black beans, maybe salsa. Microwave for about 30 seconds.
Tex-Mex casserole: corn tortillas, beans, cheese, canned diced tomatoes, olives, taco spices: layer as desired (tortillas on the bottom) and bake until hot throughout.
Veg chili: beans - three kinds, or two kinds and fake meat (TVP ground 'meat' might be in the freezer section. Saute onions and green peppers with chili powder and cumin and garlic (and a little bit of cinnamon); add beans and a can of diced tomatoes. Reheats fabulously.
Lentil-barley porridge (very filling - wintery): make barley and lentils as according to package - you can probably cook them together. Cook them in vegetable broth instead of water. When done, do not drain all the liquid. Add cooked sweet potato, cut into chunks, and frozen peas and cook a little bit longer. Season as desired (pepper, maybe thyme and parsley) and then put it in the fridge in a container. Keeps a week and is better on the second day.
For quick and popular, I like veggie nachos.
Spread tortilla chips on a plate, drop refried beans by the spoonful, cover with shredded cheese and any chopped veggies you like such as onions or peppers. Bake in the oven until the beans bubble and the cheese melts. Add chopped lettuce and tomato (and sour cream if desired, and you have dinner!
You can do a bigger batch on a cookie sheet for a family.
