Vegetarian Casserole Recipes?

I don't like using pasta much in casseroles. I love using potatoes, and cheese always tastes good.

I'm mostly carnivore and there is a vegetarian section here (but not here) but I'll give you a recipe anyway.


A veghead friend of mine made what he called a ';root casserole'; once that had thin slices (mandolin thin) of potato, onion, garlic, celery root, turnip and carrot.

Cheesy Spinach Casserole





Ingredients:


3/4 cup chopped onion


1 tablespoon butter


2 eggs


1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry


2 cups (16 ounces) 2% cottage cheese


1 cup (4 ounces) shredded reduced-fat cheddar cheese


3 tablespoons all-purpose flour


1/8 teaspoon salt


Directions:


In a small nonstick skillet, saute onion in butter until tender. In large bowl, combine the eggs, egg white and spinach. Stir in the cottage cheese, cheddar cheese, flour, salt and onion mixture. Pour into a 1-1/2-qt. baking dish coated with cooking spray.


Bake, uncovered, at 350掳 for 50-60 minutes or until set. Yield: 6 servings.



CHEESY HASH BROWN POTATO CASSEROLE





2 lbs. hash browns, defrosted


1/2 c. melted butter


1 tsp. salt


1/4 tsp. pepper


1/2 c. chopped onion


1 can cream of chicken soup


1 c. milk


1 c. sour cream


2 c. grated sharp cheese (Colby or cheddar)





Mix above ingredients and put in a 9';x13'; pan.





TOPPING:





2 c. crushed corn flakes (can use Ritz crackers)


1/2 c. melted butter





Melt butter and add corn flakes to mix. Sprinkle topping over potatoes and bake at 350 degrees for 45 minutes.
layer sliced potatoes with sliced onions in a baking dish. Pour a can of cream of what ever you like soup over that . layer some cheese in there and season well with salt and pepper. Make sure liquid is even with the top most potato layer. Add more water or milk as needed..


Bake till golden brown and bubbling At 350 degrees, for about 1 hour.
