Any good vegetarian dinner recipes for tonight? it's Good Friday.?

1 (16 ounce) package penne pasta


4 cloves garlic, minced


3/4 cup olive oil


1 large head fresh broccoli, blanched (I use frozen broccoli instead, sometimes.)


1 (6 ounce) can sliced black olives





(Not in the recipe, but I add a bit of parmesan and red pepper flakes)





DIRECTIONS


Cook pasta in large pot with boiling salted water until al dente. Drain well.


In a medium skillet over medium heat cook garlic in olive oil, being careful not to allow garlic to burn.


In a large bowl add the cooked broccoli, cooked and drained pasta, and black olives.


To serve, pour garlic oil over pasta and vegetables. Serve warm.Any good vegetarian dinner recipes for tonight? it's Good Friday.?

How about a homemade Veggie Pizza? Cheese, mushrooms, onions, olives, and anything else you might like.





Sounds kind of good to me!
This is easy. Just make vegetable soup without any meat.
