Mock Meatloaf
Serves 4
1 pound vegetarian ground beef (try Boca Burger's Original Meatless Ground Burger or Gardenburger's Meatless Crumbles)
3 tablespoons ketchup
2/3 tablespoon prepared mustard
1/2 tablespoon horseradish
1 small onion, finely chopped
1 teaspoon salt
1/2 cup soft bread crumbs
1/4 cup soymilk
1/2 tablespoon soy sauce
Preheat oven to 350掳F degrees. Combine all ingredients in a large bowl. Press lightly into a bread loaf pan. Wrap loosely with foil. Bake for about 1 hour and 20 minutes.
Spaghetti With Hearty Mushroom Sauce
Makes 3 servings
1/2 cup textured vegetable protein (TVP) flakes or granules
1/2 cup boiling water
8 ounces spaghetti
2 teaspoons olive oil
3/4 cup chopped onions
1 garlic clove, minced
1 cup chopped mushrooms
2 cups tomato sauce
2 tablespoons tomato paste
2 tablespoons soy sauce
1 teaspoon dried basil leaves
1 teaspoon onion powder
1/2 teaspoon dried oregano leaves
salt to taste
Place the TVP in a mixing bowl and pour the boiling water over it. Mix well and set aside.
Cook pasta, drain, and set aside in a serving bowl.
Heat the oil in a large saucepan over medium to high heat. When the oil is hot, add the onion and garlic and saut茅 for 10 minutes. Then add the mushrooms and TVP, and saut茅 for 5 more minutes. Stir in the remaining sauce ingredients and bring the sauce to a boil. Reduce the heat and simmer for 10 - 15 minutes, stirring occasionally.
Pour the sauce over the pasta and mix well.
Egg-Free Breakfast Scramble
Serves 2
1 14-ounce package extra-firm tofu, drained
2 tablespoons vegetable oil
1/4 teaspoon turmeric
1 tablespoon garlic powder
1 teaspoon onion powder
1/2 cup nutritional yeast
salt and pepper, to taste
1/2 pound mushrooms, chopped (optional)
1 green onion, finely chopped (optional)
1 bell pepper, finely chopped (optional)
Using a fork or potato masher, crumble the tofu into small pieces and then saut茅 in oil in a frying pan. After a few minutes, add the remaining ingredients, turmeric through bell pepper, if used. Lightly toss in the pan until well-cooked. Serve warm.
Fluffy Pancakes
Serves 4
1 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon sugar
1 1/2 cups soymilk or water
2 tablespoons vegetable oil
Mix together the dry ingredients and then stir in the wet ingredients. If the batter is too thick, add 1 tablespoon of water at a time until reaching the desired consistency.
Pour onto a pan with a nonstick surface and cook over medium heat, turning once when the edges begin to bubble and brown.

Mushroom %26amp; Cheese Macaroni
Ingredients
400g wholewheat macoroni
60g butter or margarine
2tbs chopped parsley
450g mushrooms
60g grated cheese
Method
1. Cook macaroni according to manufacturer's instructions.
Slice mushrooms and fry in the fat for 8 mins then add the parsley.
Drain macaroni and mushrooms and toss together lightly.
2. Serve sprinkled with grated cheese.

creamy mushroom and cheese pasta
1 can of cream of mushroom soup
4 cups of cooked pasta
1 cup of broccoli
1 cup of carrots
1 cup of snow peas
1 cup of cheese
1/2 cup of sour cream
mix everything together
pour into a deep dish
sprinkle cheese on the top of it
cook for one hour at 180 degrees
its a simple meal thats really tasty and you can serve it with garlic bread and a garden salad
Pita bread with hummus inside, filled with cucumbers and feta cheese. 3 bean salad on the side with balsamic dressing.
A salad with garlic croutons
Or you can mix heaps of chopped veggies crack a couple of eggs and mix through, mix through some crumbly fetta chees and bake inside a shortbread or fillo pastry pie- trust me its YUM. The key is use heaps of every sort of veggie and fresh corn etc.
You can even put the chopped up veggies in a pan of pumpkin soup (a tin of is fine) add a dollop of sour cream mix through and cook untill vegies are softened a bit and sauce thickens up, then pour the veggie sauce over wholemeal pasta, sprinkle pine nuts and plenty of parmesan cheese- and trust me- THIS ONE IS YUM!!! I was amazed when I first tasted it.
Omelletes are nice too.
