I wish I was your mother! Here's an idea she might like.
Make some mini rice flour pancakes and top with fresh strawberries/raspberries, a little scoop of mascarpone cheese and a drizzle of either heated raspberry jelly or maple syrup.
If you would like something not sweet perhaps make mini italian bruschetta, Grill slices of sour-dough bread and spread with fresh butter and garlic and top with tomato and basil. Serve hot with a sweet smoothie to drink in a wine glass.

well hash browns came to mind...with your dietary restrictions...then i thought..about a plate...hash browns...maybe a roasted tomato, mozzarella, and basil stack...drizzled with a balsamic vinaigrette....maybe some cucumber and cream cheese sandwiches..a bit of a buffet....stuffed mushrooms, rigatoni with a pesto sauce. think brunch, not just breakfast.
It's a bit hard to answer this to be honest. But i would sugesst toast or cereal. Or perhaps some vegetable fritters that dont require egg to hold them together.
