First off, keep in mind that I'm only seventeen. I still live with my family, and money is tight. I've been a vegetarian for almost two years, but I'm really starting to get sick of bland, frozen soy burgers* and scalding hot, overcooked burritos. That's all I generally eat, because of time/effort/money concerns, as well as the fact that I'm the only vegetarian in the house. Also, I don't eat dairy, because I'm lactose intolerant. I was wondering if anyone had any quick, simple recipes that I could try out, that would help me get the nutrients I need without sacrificing taste.
*by soy burgers, I mean the hamburger style ones. I actually enjoy the mock chicken patties, but they get old after awhile, and the regular soy burgers are bland and gross.I need quick/easy vegetarian recipes.?
You can make:
Pita bread with falafel, avocados, %26amp; hummus.
Vegan chili made with black beans, kidney beans, corn, green beans, chili sauce, green peppers %26amp; onions.
Baked/fried/BBQ tofu, seiten, TVP, or tempeh.
Cook and fry a large portobello mushroom and make a burger.
Stir fry rice, beans, and vegetables.
Bean, rice, %26amp; veg cheese burrito or quesadilla.

Sporadic has it right on, that's one of my favourite meals. I serve that at a party and people ask me for the recipe. A slight modification is to bake it in an oven, perfect for a rainy day or when unexpected friends drop in.
Other things like cans of baked beans, spaghetti, corn, creamed corn, tomatos, peas, beetroot, asparagus, beans are all very cheap winners, potatoes, fruits etc.
A lesser idea then is to make some bulk salad using things like fresh baby spinach, rocket, cherry or regular tomato, avocado, carrot, onion, olives, you could probably deep fry some tofu to add a bit of interest, pine nuts. This will last about 3 days if you refrigerate it. if you want to add some dressing, do it upon serving otherwise the salad will deteriorate. Add a bit of pasta to fill it out somewhat.
for hot food, broccoli and cauliflower on a plate is a simple easy classic or try something like stuffing some capsicum with chopped vegetables. make a few of them then you can just heat them up in the oven..
Tomato-Avocado Surprise
Ingredients

1 Avacado
Peel and seed the avacado and place on a plate. Put the tomato next to it. Enjoy!.

Vegan Chicken bites are awesome, and I'm not even a vegetarian. But if I was, I would grow my own veggies, on like a plant rack with a sun lamp. You might not have room for that, but I love fresh veggies. Soy milk is a good replacement for real milk and its good for you. Theres a lot of ways to make potato salad too, I love that sh*t. now let me think. First you boil some potatoes with out the skins, and while your doing that you need to cut up some some celery, put some peas on to cook too, if you eat eggs boil them up, and if you eat tuna make some of that, get out a big bowl, put the celery in, throw in some mayo, I think they make lactose free mayo, add salt and pepper, add the potatoes when their done and eggs/tuna if you choose, and the peas and mix it all up, then put in a 1/4 of a cup of warm water from the tap and keep mixing till its nice and creamy.
I think thats all right, but I could be wrong, oh yea onions, I forgot onions. and corn goes well too. from there just add other things you like, and experiment I guess.

This is awesome and cheap. Even my meat eating hubby loves this dish. It's also really easy to make. If you are in Canada, check out the new meatless items on the PC Blue Menu (available at Superstore). They use a mixture of soy, vegetable, and wheat protein so their meatless ';meats'; have a much different taste than Yves or other common vegetarian meat substitutes. They are also a very good price.
