Assuming you are vegetarian and eat cheese try this,
Eggplant bake
1 medium eggplant
1 egg beaten
1 cup (or more) seasoned bread crumbs
1 cup grated mozzarella
2 cups roasted garlic tomato sauce.
Set oven for 350 and lightly grease the bottom of a 9 x 13 baking dish.
Cut the eggplant crosswise into twelve even slices, dip each into the beaten egg then into the breadcrumbs coating both sides and the edges.
Place 6 large slices in the baking dish with space between, sprinkle each with mozzarella and top with sauce. Place a smaller slice on top and top with mozzarella and sauce. Spoon a small amount of sauce around each stack.
Bake at 350 for 35-45 minutes or until the cheese is bubbly and golden.
Yes I worked up my own vegetarian recipes for myself and in order to convince my husband to change his eating habits that were causing him bad health. Result is he loves them so go veg with me. black bean tacos
fry onions, garlic in oil for 2 minutes. add water, canned and drained black beans, taco seasoning, chipotle pepper(optional). boil for 45 minutes. drain. combine tomatoes, onions, cilantro. put that mix on black beans. serve with your favorite hot sauce

Super Spread
3/4 cup tahini
1/4 cup blackstrap molasses
a few tablespoon whole flax seeds
ample syrup to sweeten (optional)
wheat germ or rice bran to sprinkle
a few slices of whole grain toast
Just put everything (except the toast) in a bowl and stir! the mixture seizes up a bit when you mix and if you work it a lot it comes out like halvah.
Punchy Pita
2 pitas
olives
2 shredded carrots
shredded lettuce
tomato
Toast pita. Dice olives and tomatoes. Fill pita with above ingredients
Apple Sandwich
2 slices whole wheat multi seed/grain vegan bread
1 apple; sliced in rounds (cored)
1 tablespoon almond butter
Spread one slice of the vegan bread with the almond butter; place apple rounds on top; cover with 2nd slice of vegan bread.
'Chicken' Nuggets
firm/extra firm tofu
olive oil
soy sauce
vegan shake and bake
garlic salt
Cut the tofu into half inch cubes, or to your liking, and pour a small amount of soy sauce, as well as garlic salt on top and all around the cubes. Dip cubes in olive oil for moisture and then place in bag of ';shake and bake';.
Add olive oil to frying pan then place tofu in pan, medium high flame. It should take about a minute or less on each side, depending on how high or how well your oven works. When nuggets are done, enjoy them w/ ketchup or bbq sauce.
Roasted Garlic and Fava Bean Paté
1 16-ounce can fava beans
1 medium tomato, diced
2 - 3 cloves roasted garlic
1/4 cup onion, diced
1 tablespoon fresh parsley, chopped
salt and pepper to taste
Press fava beans through a strainer to remove outer skins. Place in food processor and add tomato, roasted garlic, onion, and parsley. Purée ingredients. Add salt and pepper to taste. Serve with warm, crusty bread.
