Vegetarian Mince Pies





4 ounces currants


4 ounces raisins


4 ounces sultanas


2 ounces cooking dates


2 ounces candied peel


2 ounces candied cherries


2 ounces flaked almonds


1 ripe banana -- peeled


4 tablespoons brandy or whisky


1/2 teaspoon ground ginger


1/2 teaspoon grated nutmeg


1/2 teaspoon mixed spice





Pastry:


8 ounces flour


4 ounces shortening


6 tablespoons cold water





Mix everything together either by hand or, if you desire a smoother


texture, in a food processor.





Rub shortening into the flour until the mixture resembles fine


breadcrumbs. Add enough flour to enable the pastry to hold together.


Roll out pastry and cut into 12 cm circles. Press circles into the


bottom of lightly oiled baking tins. Fill with mincemeat and cover


with another pastry circle. Press down at the edges and make a small


steam hole in the top.





Bake for 10 minutes at 400F, 200C. These pies can be frozen


before baking either in the tin or remove from tin once they are


solid. Mincemeat will keep for 1 week covered in the fridge.





Chickpea Burgers





1 can (19 oz/540 mL) chickpeas, drained


1 cup (250 mL) cooked rice


1/3 cup (75 mL) each grated onion, carrot and zucchini


1/4 cup (50 mL) dry bread crumbs


1 egg, beaten


1 clove garlic, minced


2 tbsp (25 mL) tahini or peanut butter


1 tbsp (15 mL) lemon juice


1/2 tsp (2 mL) salt


1/4 tsp (1 mL) each pepper and dry mustard


3 pita breads





In large bowl and using potato masher, mash chickpeas coarsely; stir


in rice, onion, carrot, zucchini, bread crumbs, egg, garlic, tahini,


lemon juice, salt, pepper and mustard. Shape into six 3/4-inch (2 cm)


thick patties.





Place on greased grill over medium-high heat; cook for about 5


minutes per side or until golden brown. Halve pita breads; place

You can probably throw together any number of soups in less than an hour. Minestrone, broccoli cheese, split pea.





You can also do a mac and cheeese casserole.


You can also do a rice and lentil dish with broccoli and parm.





White rice, split peas, and lentils, all combine well with each other and take only 20 minutes to cook. Since this is often the longest cooking item in any recipe, an hour gives you plenty of time to pull it all together. Brown rice on the other hand is much healthier but takes almost that whole hour. If you get it started early, you can make it work.





There are tons and tons of salads you can make in that time. You might also enjoy playing with peppers and salsas.





Also experiment with canned beans. You wouldn't have time to cook beans from scratch but you can drain them off, re-season, and combine them different ways.
Veg Lasagne- cook inions, garlic, tomatoes herbs and mushrooms in oilive oil, to make sauce- simmer 20 minutes, add more mushrooms of different type towards end.


Lay in dish, cover with lasagna sheets, add layer of mozzarella, parmesan and ricotta on top of each lasagna layer, then another layer of sauce. Continue til pasta layer is ontop, cover with cheese and herbs. Bake 20 mins. 375 degrees








Chickpea curry with potatoes


Put veg broth, chickpeas, stewed ( canned)tomatoes, chopped potatoes, salt, 1 tbs cumin, 1/2 ts cayenne, chopped onnion, knob of butter, 2 ts minced ginger, 1 ts turmeric, 1 tsp coriander powder ( or use a good curry paste- 2 tbs, or powder) in a pot,, and simmer 35 minutes.


Meanwhile stean rice ( 1 cup rice to 2 cups water, get water to a boil, then add rice with tsp salt, and take down to simmer, cover and leave 20 minutes, rice should absorb all water).


Serve curry with rice.


You can add tofu to the curry and add fresh cilantro at serving.








Pan fry big portobello mushrooms (sliced) in oil and a dash of soysauce, ts honey and garlic, keep turning over so they get browned all sides.


After mushrooms are cooked, Add sliced green tomatoes %26amp; choped green onion, 1 tb sesame seeds saute till the tomatoes are softened but not mushy, a few minutes is all.


When cooked heat fresh wholewheat burritos in the oven or MW, Fill the centre of each burrito with a dark green lettuce leaf ( sturdy drak green lettuce like romaine of greenleaf) and fill the leaf with some slices of mushroom, the slices should be thin, but meaty and thick), Wrap the burrito up. Enjoy.
