i recently became a vegeterian and i am having a hard time finding what to eat...so i just eat quesadillas most of the time!! HELP!!!Any good vegetarian easy recipes?
This is my favorite way to prepare tofu:
Tofu steaks
-Firm or Extra Firm tofu sliced into 1/2'; slices
-line a baking pan w/ foil and lay the steaks along the bottom of the pan, not overlapping.
-cut up a med onion and a carton of button mushrooms over the tofu
-then poor a good, all natural teriyaki sauce over the tofu, mushroom, and onions
-cover with foil and bake on 350 for 15-20 min.
-remove and baste tofu if not completely covered with sauce.
-bake for additional 15-20 minutes
serve with onions and mushrooms spooned over top.
goes well with french green beans and macaroni and cheese
or just stuff into a pita or wrap with lettuce or asian slawAny good vegetarian easy recipes?

Enjoy the wholesome goodness of my world famous Lemon Rosemary Carrots:
Ingredients
6-7 wholesome carrots (about one pound)
2 tablespoon flax oil
1 1/2 tablespoon lemon juice
drop of brown rice syrup
dried rosemary to taste
Directions:
Peel and chop wholesome carrots and steam for about 10 minutes until tender-crisp.
Meanwhile, mix oil, lemon juice, and brown rice syrup in a small cup. When wholesome carrots are done, place in serving dish and mix with lemon juice mixture. Sprinkle with rosemary and serve.

Ingredients
4 - 8-inch flour tortillas, choice of white, whole wheat, or flavored
1 1/3 cups White Bean and Roasted Vegetable Spread
4 leaves of loose leaf lettuce or lettuce of choice, washed and patted dry
3 Roma tomatoes, each sliced into 4 pieces
3/4 cup zucchini, shredded
3/4 cup summer squash, shredded
3/4 cup carrot, shredded
1 cucumber, peeled, and sliced thin
Direction
Place the tortillas flat on a cutting board; place a 1/3 cups of the spread on each tortilla, and spread within 1-inch of its edges. Place 1 lettuce leaf in the center of each tortilla so that a little of it hangs out the top edge. For each tortilla: on top of the lettuce place 3 slices of tomato, 3 T. shredded zucchini, 3 T. shredded summer squash, 3 T. shredded carrot, and in rows, 6 slices of cucumber. Fold the bottom of the tortilla up to the center of the tortilla, then fold in each side, one overlapping the other to enclose the vegetables, and secure the wrap with a toothpick. Wrap the veggie wraps in aluminum foil, waxed paper, or plastic cling film, or place in an airtight container.
*Variation - substitute any of the suggested vegetables for some of your other favorite vegetables, such as shredded beets, shredded sweet potatoes, shredded or sliced radishes, chopped vegetables, fresh sprouts of vegetables or beans, etc.
Tofu
Soft Tofu (1 container), oil the pan and fried, add white pepper, salt, green beans, some oyster sauce if you have, if not, put soy sauce, add a bit water and cover for 5 mins.
I don't know if you eat eggs. Eggs can make good dishes as well.
OH OH I GOT A GOOD ONE!!!!
