#1. ~Vegan Lasagna~
Ingredients:
Tofu 'cheese' mixture:
* 1 pkg. tofu
* Olive oil
* Pitted olives (whatever kind you like)
* Fresh basil
* Fresh garlic
* Fresh parsley
Sauce:
* 12 oz. vegan TVP (rehydrated) or frozen veggie ground ';beef';
* 1 jar plain vegan tomato sauce
* 4 Tbsp. sugar
* 2 Tbsp. olive oil
* Fresh basil and garlic to taste
* Optional splash of *vegan* cooking wine
Filling:
* 3 cups fresh spinach, steamed
* 1 small pkg. mushrooms
* 2 Tbsp. olive oil
Instructions:
Mash tofu. Add about 2 Tbsp. olive oil, several Tbsp. diced basil and parsley, 1 Tbsp. garlic, olives. Allow to marinate several hours or overnight. Mix all sauce ingredients together and set aside. Toss spinach and mushrooms in oil and set aside. In a 13x9'; pan, alternately layer vegan (eggless) lasagna noodles, spinach mixture, tofu mixture and sauce mixture. On final layer, place noodles, sauce mixture, fresh parsley and fresh basil. Bake at 400 for 30 mins.
#2. ~Veggie Pot Pie~
Ingredients:
* 4 medium potatoes, preferably russet
* 1 tablespoon plus 1 teaspoon light olive oil
* 1 medium onion, quartered and thinly sliced
* 1 medium carrot, peeled and thinly sliced
* 1 cup finely chopped broccoli
* 2 tablespoons unbleached white flour
* 1/2 cup low-fat milk, rice milk, or soy milk
* 2 tablespoons minced fresh parsley, optional
* Salt and freshly ground pepper, to taste
* 9-inch prepared good-quality pie crust, preferably whole grain
* 1/2 cup whole-grain bread crumbs
Instructions:
1) Cook or microwave the potatoes in their skins until done. When cool enough to handle, peel. Dice two and mash the other two. Set aside.
2) Preheat the oven to 350潞F.
3) Heat 1 tablespoon of the oil in a large skillet. Add the onion and carrot and saut茅 over medium heat until golden.
4) Add the broccoli along with a small amount of water. Cover and cook until the broccoli is tender but not overdone, 3 to 4 minutes.
5) Sprinkle the flour into the skillet, then pour in the milk, stirring constantly. Cook until the liquid thickens a bit, 1 to 2 minutes. Stir in the diced and mashed potatoes. Heat through gently. Stir in the parsley, if using, and season with salt and pepper. Pour the mixture into the pie crust and pat in.
6) Place the bread crumbs in a small mixing bowl. Drizzle with the remaining oil and stir until the crumbs are evenly moistened. Sprinkle evenly over the pie. Bake for 35 to 40 minutes, or until the crust is golden. Let the pie stand for about 10 minutes, then cut into wedges and serve.
Make it a Meal: For a hearty meal, serve with a substantial salad such as Green Salad with Avocado, Apples, and Baked Tofu or Mixed Greens with Green Beans, Beets, and Feta or Goat Cheese. Scalloped Corn can be baked at the same time. Other side dish options are fresh corn on the cob and Simple Glazed Butternut Squash.
#3. ~Meatless Meatloaf~
Ingredients:
* 2 16-ounce packages imitation meat (be careful, some brands may contain egg and/or dairy products), thawed
* 1 cup sugar
* 1 white onion
* 1/2 cup lemon juice
* 1/4 cup vegetable oil
Instructions:
Dice onion. Pour sugar in the bottom of a pot and heat. When sugar begins to brown, add onion and allow to carmelize. Place thawed imitation meat in a meatloaf dish. Add sugar and onion mixture and mix well. Add lemon juice and mix. Add vegetable oil and mix. Bake uncovered at 400 degrees F for 30 minutes.

Mashed Cauliflower (Dairy free, Gluten free, and Vegan)
1 medium head organic cauliflower, cut into small florets (about 6-7 cups)
2鈥? tablespoons extra virgin olive oil
2鈥? tablespoons water
sea salt to taste
Boil the cauliflower in water until very tender, about 10 minutes. Drain and place in a blender or food processor. Add olive oil and water, one tablespoon at a time until a smooth consistency, similar to mashed potatoes, is reached. Season with salt and serve immediately.
