I totally know where you coming from. My folks are meat eaters so it was a big deal to have them try some vegan/vegetarian meals. They even took some leftovers home!

This will be effortless to make! You'll just add water, kidney beans and canned tomato's (see back of box). Now they do have ';taco meat'; but I use that one for tortillas. Use the CHILI box, YES, THE VEGETARIAN CHILI BOX. Here's the grocery list (double check the back of the chili box cooking instructions just to be sure I didn't forget anything)

I love this recipe, it's very fancy too.
You need about 6 large potatoes, 1 cup of milk, 1 cup of heavy cream, 1/2 onion diced, 1-2 cups of shredded cheddar cheese, about one cup of frozen peas thawed, about 1/4 cup pine nuts or almonds. Boil the potatoes until soft (peel if you want, sometimes I do, sometimes I leave the skins on) and slice thin. Bring the cream and milk to a gentle boil and simmer for about 2 minutes, stirring constantly. Add the potatoes, cheese, onion, and season with salt and pepper. Simmer for 5-10 minutes. Add the peas and nuts and pour into a greased casserole dish. Bake until bubbly, about 30-45 minutes.
For Entree
Corn Chowder Soup
3 T oil
3 onions, diced
4 garlic cloves, minced
5 cups fresh corn kernels, cut from the cob
3 T soy powder (or soy flour)
2 1/2 quarts / 2 1/2 L water
4 T tahini
3-4 potatoes diced
2-3 carrots, sliced
3 T Bragg's Liquid Aminos or tamari
1 t garlic powder
1/2 t basil
1/2 t thyme
1 t sea salt
In a large pot, heat oil. Add the onions and garlic and saute for 3-4 minutes. Mix in the corn. Saute for 3-4 minutes more.
In a blender, combine 1/3 of the corn/onion saute with 1 T soy powder and 1/3 of the water and whiz. Set mixture aside. Repeat blending 2 more time with remaining 2/3 of the corn onion mixture, adding tahini to the final blender. A thick creamy texture is desired. Pour mixture back into the soup pot. Add remaining ingredients and cook (don't boil) on medium-heat until the vegetables are soft.
For Main
Tortilla Pizza Puttanesca
1 Whole Wheat, Spelt, or other Medium Tortilla - 10 inches or so.
1/2 Cup of Tomato Sauce - Home made or Jar is fine
2 Tablespoons fresh Basil Leaves, chopped
1/2 Cup sliced fresh Mushrooms
Teeny Pinch of Crushed Red Pepper Flakes (Optional, only if you like hot!)
2 Tablespoons coarsely chopped Kalamata Olives
1/2 Cup chopped fresh Spinach Leaves
3/4 Cup Shredded Soy Cheese, White or Tofu cut in small chunks
Bake the Tortilla on a pizza stone or just a flat pan in a toaster oven [great for one!] or preheated oven at 350 degrees until lightly browned. [10-12 minutes]
Remove from oven and spread the Tomato Sauce within 1/2 inch of edge.Place Mushrooms, Olives, Spinach, Basil, Red Pepper Flakes, on top of sauce, then Sprinkle with Shredded Soy Cheese or TofuPlace back in oven for 10-12 minutes until looks toasty.
For Dessert
Lemon Sorbet Pie with Toasted Almonds and Fresh Berries
INGREDIENTS
1 1/2 cups vanilla-flavored vegan cookie crumbs (about 20 small cookies) - See notes
3 tablespoons non-hydrogenated margarine, melted
1 quart lemon sorbet, softened
1 cup toasted sliced almonds
2 cups fresh ripe strawberries, raspberries, or blueberries
Lightly coat a 9-inch springform pan with nonstick cooking spray. Place the cookie crumbs and melted margarine into the prepared pan and mix to moisten the crumbs. Press crumb mixture into the bottom and up the sides of the pan. Set aside.
In a bowl, stir the softened sorbet until smooth. Spoon into prepared crust, spreading with a rubber spatula to flatten the top. Freeze several hours or overnight.
When ready to serve, carefully remove sides from pan and top with the toasted almonds. If serving whole, place on a platter and surround with fresh berries. If plating individually, cut the pie and place the pieces on dessert plates. Arrange a large spoonful of the fruit decoratively next to each slice of pie.
NOTES
This versatile pie is refreshing, sophisticated, and oh so easy. Change the flavor of sorbet, crust, and fruit according to your preference. Instead of topping with nuts, you can top with fresh fruit of choice, or serve with a fruit sauce. Allow at least 4 to 6 hours in the freezer before serving.
To make cookie crumbs, grind the cookies in a food processor or place the cookies inside a plastic bag and crush with a rolling pin.

Really knock them out of their socks by cooking with a meat replacer like Tempeh or Seiten or Organic Tofu..You can add tofu to almost any awesome recipe so I won't give you a link to that cause you can get creative on your own with it and add water-pressed tofu to your favorite recipe (or your parents, something good you used to enjoy with them as a child will be sentimental and prove you really care)
