One time, I was pretty hungry and didn't have much of a choice if I wanted something quick. I opened the fridge and all I had was summer salsa, sour cream, boca chicken patties, and cheese. I used that. I cut the chicken patties into strips and then put the cheese on top of them. I then heated up the chicken and cheese so it was melted, let it cool (just enough so it didnt burn my hands or mouth) and then put some summer salsa and sour cream on it. It was reallllly good. Take a flour tortilla and fill with grilled vegetables (any grilled vegetables will do, like zucchini and onions), shredded cheddar cheese, sliced avocado, lettuce and your favorite dressing (like balsamic vinaigrette, caesar dressing or mayonnaise). You really don't need a recipe. Just throw whatever you like in there with some dressing or whatever condiments you like %26amp; wrap it up.
My personal favorites are leftover rice %26amp; beans or pretty much any mexican kind of thing with some salsa %26amp; vegan ';sour cream';, any mix of raw veggies with Italian dressing, or just roasted tubers and/or other roasted veggies.
Chop some onions, peppers and mushrooms and stir fry them til cooked. Put into wraps with salsa %26amp; sour cream or with hummous.
