it's not that i miss meat it's that there isn't a very big selection of vegetarian dinners really

There are lots and lots of vegetarian products in every large supermarket. Check the frozen food section for Boca, Morningstar Farms, Amy's, Yves, Lightlife, Quorn, etc. They make burgers, hot dogs, corn dogs, bacon, pot pies, pizza, buffalo wings, ';chicken'; tenders, all sorts of good things.





Also, check your phone book for a Seventh Day Adventist bookstore. They sell an incredible variety of vegetarian food, including pate, cold cuts, meatballs, scallops, pork chops, and more.





If there's a sizable health food store nearby, check it out. There should be lots of options there for you, too. And then here are a few websites with literally thousands of vegetarian recipes:

Tofu Parmigiana -- You can also use eggplant instead of tofu.





..DIRECTIONS


1.In a small bowl, combine bread crumbs, 2 tablespoons Parmesan cheese, 1 teaspoon oregano, salt, and black pepper.





2.Slice tofu into 1/4 inch thick slices, and place in bowl of cold water. One at a time, press tofu slices into crumb mixture, turning to coat all sides.





3.Heat oil in a medium skillet over medium heat. Cook tofu slices until crisp on one side. Drizzle with a bit more olive oil, turn, and brown on the other side.





4.Combine tomato sauce, basil, garlic, and remaining oregano. Place a thin layer of sauce in an 8 inch square baking pan. Arrange tofu slices in the pan. Spoon remaining sauce over tofu. Top with shredded mozzarella and remaining 3 tablespoons Parmesan.





5.Bake at 400 degrees F (205 degrees C) for 20 minutes.

Fast and Easy Tofu Lo-Mein --








.INGREDIENTS


1 (16 ounce) package extra firm tofu


2 tablespoons olive oil


2 (3 ounce) packages Oriental flavored ramen noodles


1 (16 ounce) package frozen stir-fry vegetables


1 1/2 cups water


1 tablespoon soy sauce, or to taste

1.Press tofu between paper towels to remove some of the water; cut in to bite size cubes. Heat olive oil in large skillet over medium-high heat. Add tofu, and fry until golden brown, about 15 minutes. Stir occasionally to prevent burning.





2.Meanwhile bring water to a boil in a medium saucepan. Add noodles from ramen packages, reserving the seasoning envelopes. Boil for about 2 minutes, just until the noodles break apart. Drain.





3.Add the stir-fry vegetables to the pan with the tofu, and season with the ramen noodle seasoning packet. Cook, stirring occasionally until vegetables are tender, but not mushy. Add noodles, and stir to blend. Season with soy sauce to taste and serve.

Creamy Vegetable Medley --








.INGREDIENTS


1 (16 ounce) package frozen broccoli, carrots and cauliflower combination


1 (10.75 ounce) can condensed cream of mushroom soup


1 cup shredded Cheddar cheese, divided


1/3 cup sour cream


1 (2.8 ounce) package French-fried onions, divided


1/4 teaspoon black pepper

1.Preheat oven to 350 degrees F (175 degrees C).





2.Cook vegetables according to package directions; drain. In a large bowl combine vegetables, mushroom soup, 1/2 cup cheese, sour cream, 1/2 can fried onions and pepper. Transfer to a deep pie plate.





3.Bake in preheated oven for 30 minutes. Sprinkle with remaining cheese and fried onions; bake 5 minutes longer.

Try making vegetarian Indian Korma's and other curries too. They are probably one of the best vego choices that are very yummy.





Also do a you tube search on vegetarian recipes videos.
I suggest if you are a vegetarian you still eat fish.


If not you can eat lentils and salads.


All grains are good for you and have great flavor.


Always pasta.


And vegetarian sandwiches like cheese sandwiches and vegie sandwiches.
