I am a vegetarian and my boyfriend eats meat. I usually make us dinner but I am often at a loss of what to make for the both of us to eat. Does anyone know an easy/quick vegetarian casserole dish that's relatively healthy and inexpensive? I need something that will satisfy my boyfriend's big man appetite. Make Vegetable Lasagna! He probably won't even miss the meat. You could use zucchini slices (the long way) in place of noodles, too, if you want. Just add lots of veggies, and don't skimp on the cheese. Lasagna always fills guys up.Does anyone know an easy vegetarian casserole recipe?
I am not sure if these count as a casseroles, but my fiance still occasionally eats meat (though he has eats mostly vegetarian these days) and he loves when I make these recipes. Our favorite is the one with the biscuits. Both are fairly cheap to make, especially the biscuits one (the seitan in the second one can be expensive unless you make your own).

I make ';Mexican Lasagna'; a lot where you just layer refried beans, crushed tortilla chips, salsa and cheese. Sometimes I'll use black beans instead of refried beans. It's especially cheap if you use old broken chips since they do not need to be fresh. The top layer should be cheese.
I'm a guy so I can say this is a good guy meal. It's basically like nachos.
