I'm relatively new to vegetarianism (just over a year) and am not particularly the culinary genius! Today I managed to whip up my greatest quick and tasty vegetarian snack to date! It consisted of 75g of wholemeal pasta, 100g chickpeas, 25g tomato pesto sauce and a squirt of tomato puree. Just wondered if anyone had any ideas of how I could improve this almighty dish?!Can you improve this vegetarian recipe?

Throw in some more veggies. Some garlic. Sprinkle some nutritional yeast on top. Saute the veggies in olive oil or rub with an olive oil-herb mixture and roast.
Flavor. Spices. Nutritional yeast.
Everyone has had some great ideas. Along with basil and oregano, I add organic cane sugar to mine to make if a little sweet. Also, you can add shredded carrots to the sauce to sweeten it up a bit.
It's a great time to sneak some greens in your diet by adding baby spinach.

Add some baked mushroom, onions,courgettes, mixed peppers, onions, and some grated ginger OR fresh basil.
I would add garlic chopped up, onions (red are sweeter), a little bit cilantro, green and yellow peppers (sweet also), corn, peas and some olive oil. (pure extra virgin olive oil!)
Just experiment and enjoy!

Some garlic toast.
Vegan bread (or whatever kind you eat), some smart balance light margerine-its vegan (or whatever kind you have) and some garlic salt.
Preheat the oven, spread some margerine of the toast and then sprinkle the garlic salt on it and stick it in the oven but be careful not to leave it in there too long. Take them out once they are slight toasted.
I'm not a culinary genuis either, as you can tell. :) But, garlic toast is very tasty.
Add more veggies if you like. Squash would be nice, broccoli, peas... Sprinkle with grated Parmesan cheese.
