Family style vegetarian meal recipes anyone?

I love Mexican foods and came up with a variation of the standard Calabasitas hope you like it:





1 head cabbage


1 medium yellow onion


2 zucchini or Mexican squash cubed


1 ear of corn with the kernels removed (or 1 cup corn off the cob)


1 tablespoon olive oil


1 teaspoon cumin (semi crushed)


salt and pepper to taste





Cut cabbage and onion into strips - heat pan and add oil - when oil is hot start cooking the onion until it begins to caramelize, add cabbage and stir - when cabbage is about half done add zucchini and corn and spices stir until all are well cooked serve hot with tortillas of you choice and salsa.

Here's one, I Hope you like it





SOY CUTLETS VEGETARIAN STYLE





1 1/2 c. chick peas (garbonzo beans)


1 c. water


1/4 c. pecan meal (or other nut, chopped fine)


3 tbsp. soy sauce (health food store ';Braggs'; or ';Dr. Bonners'; soy sauce or may use whatever you have)


1 c. rolled oats


1 med. onion, chopped


1/2 tsp. celery salt (or 1 stalk celery)


1/4 tsp. onion and garlic powder





Blend beans and water until smooth. Add nutmeal, soy sauce, oats, onion, celery salt and onion and garlic powder. Mix all together very well. Let set 10 minutes to absorb moisture. Drop by tablespoons on lightly oiled skillet. Brown lightly on both sides. Serve with homemade ketchup (recipe follows).





HOMEMADE KETCHUP:





2 c. tomato paste


1/4 c. honey


2 tsp. onion powder


1/4 tsp. oregano


1/4 c. oil (optional)


1/4 c. lemon juice


1 tsp. salt


1/4 tsp. garlic powder
