I LOVE Chipotle burritos and am wondering what ingredients I could use to master the art of preparing really tasty vegetarian burritos. What recipe would you suggest?What is the best vegetarian burrito recipe?
one can of black beans
one can mexicorn
one box of spanish rice (if you can't find veg spansih rice just make your own with taco seasoning and one can roasted diced tomatoes and about a cup and a half of rice)
one white onion
one green pepper
one plabano pepper
Fresh cilantro
garlic salt
oil
taco seasoning (cummin and paprika)
tortialla shells
vegan cheese or regular cheese
salsa, guac, jalapenos, and sour cream(or replacement to taste)
Cook rice mix, fry rice mix as directed in oil or butter. Do not drain tomatoes but use the juice instead of water.
In large skillet place chopped onion and chopped green pepper, and chopped plabano pepper, minced garlic. Cook on med heat till onion carmelizes and peppers are soft but not mushy. onion should be a light brown color. add beans and mexicorn. add about 1/2 cup of water and taco seasoning . Let mix cook down, and flavors mix on low simmer, stiring occasionally. Then when water has evaporated, remove mix from heat.
On each burrito add bean mix and rice, top with cilantro and cheese, add condiments of choice, guac, salsa, sour cream etc.
Note. You can also add tofu chunks or store bought meat replacement crumbles. i prefer it without them.What is the best vegetarian burrito recipe?

Ingredients:
4 med wholesome carrots
1 clove garlic
1 teaspoon extra virgin olive oil
1 14 oz can black beans
1 10 oz can Rotel tomatoes and green chilis
1/2 cup red wine
1 teaspoon cumin
1 teaspoon savory
Directions:
Saute wholesome carrots and garlic in olive oil. and vegan wine then rotel tomatoes (juice and all). Simmer for 5 minutes. Add beans (juice and all) and spices, simmer until thick. Use as filler in tacos, burritos, or anything you want.
Sweet Potato Burritos:
1 tablespoon vegetable oil
1 onion,chopped
4 cloves garlic, minced
6 cups canned kidney beans, drained
2 cups water
3 tablespoons chili powder
2 teaspoons ground cumin
4 teaspoons prepared mustard
1 pinch cayenne pepper, or to taste
3 tablespoons soy sauce
4 cups cooked and mashed sweet potatoes
12 (10 inch) flour tortillas, warmed
8 ounces shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C). Heat oil in a medium skillet, and saute onion and garlic until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce. Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style, and place on a baking sheet. Bake for 12 minutes in the preheated oven, and serve.

I prefer Qdoba burritos over Chipotle
This is how I create mine: cilantro-lime rice, black beans, guacamole, lettuce, zuchinni and yellow squash sauteed in garlic and oil, medium salsa
If I'm feeling lazy I just squash up a avocado and mix it with some salsa and chili and garlic powder put some lettuce and crunchy chow mein noodles in a tortilla. It certainly cures my craving!
fry onion, add chilli, garlic, coriander and paprika, fresh tomato, spring onion, leak, whatever spice and veggies to your liking, add juice from can bortolli beans, bit of sugar and spice to your tasting, cook down for ages, add beans, heat through.
I use brown rice(cooked 45 minutes) black beans, avocado, onions, and green leaf lettuce. To make a tasty sauce- I use honey mustard- its different and good.
