One of my favorite recipes:
Tofu Scramble

1 box silken firm tofu, patted dry and mashed
1/8 tsp. turmeric
1 tsp. onion powder
1/2 tsp. salt
1/2 cup of your favourite vegetables such as broccoli, fresh mushrooms, onions, or tomatoes. (I use tomatoes and red peppers).
Place the tofu in a lightly oiled saut茅 pan and cook over medium heat for 3 minutes. Add the remaining ingredients, stir well, and cook for 5 to 8 minutes, until the vegetables are cooked and the tofu is heated through.

But if a recipe calls for cows' milk, you use soy milk (or rice milk or almond milk). Soyatoo and other companies make vegan ';creams';.
If a recipe calls for eggs, there are many types of egg replacers (check any vegan cookbook) that you can use to suit your needs.
Going from vegetarian to vegan is a little easier than going from omnivore to vegetarian--you've already worked through many of the vegan no-nos.
Hi, I'm also just starting to adjust to a vegan diet. Something that's really helped is frozen banana's as a substitute for Ice Cream. Trust me, it's possibly better then the milky version.
Just slice up a banana into bite sized chunks, put it back into it's skin and pop it into a freezer. Once it's iced, the skin will be black, but the banana is creamy and cold.
Really yummy.
In my opinion Indian cuisine offers the best vegan food. Try searching for some Indian recipes. There are lots of lentil/rice dishes and such.
