Creamy mushrooms with garlic: this is a recipe i found in a book many time ago and now i love it!
Ingredients:
- 2 Tbs. of olive oil
- 1 crushed garlic clove
- 2 onions chop into pieces
- Salt and pepper
- 12 oz of mushrooms
- 6 oz of milk cream
- Parsley to taste
Preparation: In a pan put the olive oil and garlic, onions and the mushrooms add salt and pepper and let it cook. When the onions and garlic are light brown add the cream, cook for like 4 more minutes and ready! add the parsley to taste too. it's easy and tasty =) OK just so you know i translated that recipe from spanish so if you don't understand something let me know.

my favorite meal is lemon tofu with white rice and a side of peas mixed with butter,salt %26amp; pepper
here is the lemon tofu recipe:
3 tablespoons olive oil, divided
1 block extra firm tofu, frozen,thawed and pressed
2 garlic cloves, minced
2 green onions, chopped
1/2 cup and 4 tablespoons water
4 tbsp lemon juice
3 tablespoons vinegar
4 tablespoons soy sauce
1/2 cup packed brown sugar
1/2 teaspoon red pepper flakes, or adjusted to your taste
4 teaspoons cornstarch
2 tablespoon water
hot cooked rice
Instructions:
Cut tofu into 4 slices to make fillets or cut into bite size pieces.
Meanwhile, in a small saucepan, saute garlic and green onions in remaining 1 tablespoon oil until garlic is golden.
Add water, lemon juice, vinegar, soy sauce, brown sugar, and pepper flakes. Bring to a boil. Reduce heat to medium.
In a small cup or dish, mix together cornstarch and water until thoroughly blended. Pour cornstarch mixture into sauce, stirring constantly. Cook, stirring, over medium heat until sauce thickens to your liking. Remove from heat and combine with tofu until completely coated. Serve over rice.
I make this about 1-2x a month at my house, and even the kids love it.
Veg Cheddar Soup

This recipe is suitable for a: vegetarian diet
Preparation Time: 45 minutes
Serves: 6-8
Ingredients:

1/3 cup butter
1 lg or 2 med leeks
2 cloves garlic
1 16oz bag frozen broccoli cauliflower carrots
1 10z frozen broccoli
6 cups veg stock
1 can fat-free evaporated milk
12 oz shredded cheddar cheese
2/3 cup flour
salt and pepper to taste
tabasco (optional) to taste
Instructions:

Melt butter in pot or dutch oven.
Saute leeks and garlic until leeks are soft
Add stock and veggies
Simmer until veg is soft
Puree stock and veg mix, then pour back
Whisk flour in milk until dissolved
Stir milk mixture in slowly until well mixed
Stir in shredded cheese until melted
Salt, pepper and tabasco to taste

Goes great with fresh baked bread. You can add all kinds of veg as well, such as squash zucchini and such for different flavor combinations.

vegetarian tacos/burritos
I buy a taco or burrito kit and instead of using meat I cook four bean mix (or plain kidney beans), chickpeas, onion, canned tomato, chopped carrot and zucchini with the seasoning in a pan until cooked and then add lettuce, fresh tomato, cheese, avocado. delicious!
ricotta and spinach canneloni
in a blender mix ricotta cheese and spinach
stuff into canneloni tubes
cover with tomato pasta sauce (canned tomato, garlic, onion, italian herbs) and bake in the oven. yum.
roast vegetable salad
egglplant, tomato, zucchini, pumpkin, onion and carrots roasted in the oven with a bit of olive oil, then mixed with spinach and a bit of fetta or goats cheese.

italian salad dressing
*thaw the veggies, mix tortellini %26amp; veggies in a bowl, add desired amount of dressing. Simple %26amp; delicious!
